Ajvar – Macedonian Style

Ingredients:

  • 500g Red peppers
  • 250g Eggplant
  • 2 Cloves garlic
  • 1 onion
  • 50ml of oil
  • Salt
  • Pepper
  • Paprika
  • Vinegar

 

Steps:

  1. The eggplants and the peppers will be washed and baked. You can bake them on the grill or in the oven.
  2. If you choose to bake them in the oven, then you must put a baking paper in a tray, arrangethe eggplants and peppers on it and then put the tray inside the oven.
  3. They will be left in the oven until they are soft.
  4. Leave them a bit to cool off, then clean them.
  5. The eggplants and peppers must be choppedas finely as possible or you can insert them in a blender.
  6. The resulting mash will be put in a bowl.
  7. Now, clean, wash and grate the garlic and the onion.
  8. Season with a little salt, pepper and a pinch of paprika.
  9. Add oil and rub well.
  10. At the end, add vinegar to fully capture the taste.
  11. It can be served immediately or it may be preserved in the refrigerator for several days.
