Arnavut Cigeri

Arnavut cigeri - Albanian cuisine

Ingredients:

  • 500 g sheep or beef liver
  • 3 tablespoons flour
  • 8 tablespoons sunflower oil
  • 4 red onions
  • 1/2 parsley
  • 1/2 tablespoon Sumak
  • 1/2 tablespoon Cayenne Pepper
  • Salt and Pepper

 

Steps:

  1. Clean the liver veins and skin and cut into cubes. Put some flour on a plate then cover the liver in flour.
  2. Place the oil in a pan. When the oil is hot put the liver and change its sides from time to time until the liver becomes golden brown.
  3. Then remove from the pan and place it on a plate. Immediately sprinkle with salt, pepper and Cayenne pepper.
  4. Peel the red onions and cut them into rings, place in a bowl and add salt. Mince the parsley and mix it with red onions, salt and Sumak (traditional Turkish spice salad).
  5. Serve the warm liver salad with red onion.
