Caldo Verde

Caldo Verde

Ingredients:

  • 150g cabbage
  • 60g chorizo or smoked sausage
  • 1 large potato
  • 750ml Water
  • 1 teaspoon of salt
  • ¼ tablespoon oil
  • Cayenne pepper

 

Steps:

  1. Wash the cabbage in cold water. Then separate the leaves from the spine and chop them finely. The chopped cabbage leaves are then left for half an hour.
  2. The sausage are pierced with a fork in several places and boiled in water over high heat. When the water boils, lower the heat and cook for 15 more minutes. Then drain the water and cut the sausages into small slices.
  3. Peel and boil the potatoes in salted water for 15 minutes.
  4. Remove the potatoes from water and mash them. Then, add the puree back into the water where the potatoes where boiled.
  5. Add some oil and cook everything.
  6. The minced cabbage is put into the pot and simmered for 5 minutes.
  7. Place the sausages in the pot and boil them for 3 minutes.
