Chao Fan

Ingredients:

  • 2 spring onions (finely chopped)
  • 2 large eggs
  • 1 teaspoon salt
  • Pepper
  • 2 or 3 tablespoons oil
  • 2 cups of cooked rice (at least one day ago)
  • 2 tablespoons soy sauce
  • Ham or any type of meat finely chopped

 

Steps:

  1. Remove by hand the pelleted rice that were made by the boiling and cooling of the rice.
  2. Beat the eggs as for scrambled eggs.
  3. Fry the eggs in the pan stirring constantly but don’t dry them. Fry the meat as well. Then pour them into a bowl and wash the pan.
  4. Add 2 or 3 tablespoons of oil and then add the rice. Fry for 2-3 minutes, until the rice is hot.
  5. Add soy sauce. Mix everything but be careful not to crush the rice grains.
  6. Add the egg and green onions over the rice and mix well. Fry a few more minutes.
  7. If you want to add the small pieces of meat (chicken, pork or shrimp) separately fry the meat in a pan with soy sauce, sugar and rice wine and combine at the end the bits of meat with the rice.
