English Breakfast

English Breakfast

  • 8 pork sausages
  • 8 slices of Bacon
  • 4 eggs
  • 350g mushrooms
  • 400g pre-cooked beans
  • 4 tomatoes
  • 1 tablespoon ketchup
  • 1 tablespoon Worchestershire sauce
  • 2 tablespoons tomato concentrate
  • 2 tablespoons brown sugar
  • 1 onion
  • Extra Virgin Olive Oil

  1. Peel the onion and cut it thinly. Let it fry over low heat in a pan with a little oil.
  2. Add the beans without the cooking water and let them cook for a few minutes. Make a sauce by mixing them with ketchup, Worcestershire sauce, tomato paste and some sugar.
  3. Transfer the vegetables in a pan, add the sauce and cook in oven at 180°C for 20 minutes.
  4. Clean the mushrooms with a damp cloth, removing any residual dirt. Set aside. Thoroughly wash the tomatoes and cut them in half.
  5. In a pan, heat a little oil, add the coarsely chopped mushrooms, and sauté over high heat for 5 minutes. Preheat a grill and grill the tomatoes for 5 minutes.
  6. Cook the sausages on the grill, turning them occasionally to make them crisp and well done – it takes approximately 15 minutes.
  7. In a pan heat a little oil, and add the eggs one at a time. Cook for a minute, add a few tablespoons of water and cover them with a lid. 3 minutes are sufficient, 4 to 5 minutes guarantee a firmer yolk.
  8. In another pan or a hot plate cook the bacon for 2-3 minutes per side – it must be crisp and it must lose the fat.
  9. Assemble the dish by placing all the items neatly.
