Kokoshka – Macedonian Chicken


  • 1 chicken
  • 1 onion
  • 2 carrots
  • 3-4 tablespoons flour
  • 150 g butter or margarine
  • 750 ml milk
  • 4 eggs
  • 300 g Sirloin or Bacon/Kaizer
  • 150 g Feta
  • 150 g Cheddar
  • 1 tablespoon Nutmeg or Cardamom powder
  • 3 tomatoes
  • 4-5 garlic cloves



  1. The chicken has to be boiled together with the onion and carrots.
  2. Place the butter in order to be melt, then add flour, milk and turn off when it cools off a bit, then mix the 4 eggs and add salt and pepper.
  3. Skin, take the bones out and chop the chicken into cubes.
  4. The sausage is cut into thin strips.
  5. The Cheddar and the Feta are shaved and put together with the meats.
  6. Add cardamom powder, the crushed garlic, the cheese and the grated carrots.
  7. Mix with the remaining ingredients then put the composition in a greased tray.
  8. Decorate it with sliced tomatoes and put it in a hot oven.
  9. Bake it for about 1 and a half hour.
