Macedonian vegetable dish

Ingredients:

  • 6 Large Peppers
  • 1 Eggplant
  • 2 Zucchini
  • Tomato juice
  • Oil
  • 1 egg
  • Sheep cheese
  • Salt and Pepper

 

Steps:

  1. Wash the peppers and cut them into cubes, then fry them in oil until slightly browned.
  2. Do the same thing with the zucchinis and the eggplant.
  3. Sprinkle a little salt over them when fried.
  4. Put the tomato juice to boil. Add a tablespoon of pepper paste (optional). If you have fresh tomatoes, mix them and then simmer.
  5. When the sauce is quite thick, add fried peppers.
  6. Stir well and let it simmer a few minutes.
  7. If you want a richer version, then beat an egg and add it to the food when it’s ready.
  8. Stir well and stop the fire when you see that the egg has coagulated and the sauce has thickened (less than one minute).
  9. Gratesome cheese and add it after the food has cooled down (very important). The Cheese must not melt into the sauce, you must feel its taste when you eat.
