Pastrmajlija – Macedonian Pizza

Ingredients:

  • 1 kg flour
  • 20 gr yeast
  • A little salt, ground red paprika
  • 800 gr pork
  • Little lard

 

Steps:

  1. Take the meat, cut it into cubes, season with salt, red paprika and leave it in the fridge.
  2. Mix the yeast with warm water and flour, then let it rise.
  3. Knead the dough with yeast, salt and hot water to become of medium strength.
  4. Let it become double.
  5. Divide the dough into 8 balls.
  6. Make them look like a boat, just as it can be seen in the picture.
  7. Put a layer of lard on the inside and the margins of the boat, then add the pork meat inside it.
  8. Put it in the oven at 180°C, not for much time, about half an hour the most.
  9. Grease the pastrmajlija with lard again and a bit of oil, then put a little paprika over it.
  10. Put it back in the oven for another 5 minutes.
  11. When you remove it from the oven, put a large cloth over it and leave it to rest.
