Sardinhas Assadas

Ingredients:

  • 16 medium sardines
  • 800g potatoes
  • 8 tomatoes
  • 2 large onions
  • 50g butter
  • A handful of parsley
  • Sea salt
  • Extra virgin olive oil

 

Steps:

  1. Preheat the oven to 250°C.
  2. Clean the sardines and put them in a thick oven pan. Smear them with olive oil and sea salt. Be generous with the salt, the fish needs it. Put the pan/tray in the hot oven for 20-25 minutes.
  3. Peel the potatoes, cut them and put them to boil. Once they are cooked drain them of water, salt them and add the butter. Mix well until the butter melts.
  4. On each shallow dish place four sardines, the boiled potatoes with butter and salt, the sliced tomatoes, onions and parsley. Drizzle everything with extra virgin olive oil and serve.
