Spiced Farmhouse Fairy Cakes

Fairycakes

Ingredients:

  • 3/4 cup sugar
  • 1/2 cup margarine or butter
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1 and 1/2 cups flour
  • 1/4 cup cupcake decorations
  • 1 teaspoon cardamom

 

Steps:

  1. Preheat the oven to 185°C. Put some 18 cupcake papers on a baking sheet or place them in a muffin pan.
  2. In a medium bowl, whisk together the sugar and margarine/butter until it becomes light.
  3. Beat in the eggs using an electric mixer or a blender.
  4. Add some cinnamon and ginger to the composure and mix them well. Stir in some flour until it becomes well blended.
  5. Put a generous tablespoon of the mixture into each paper, and level it out.
  6. Bake for 15 to 20 minutes in the preheated oven, until the tops spring back when lightly pressed.
  7. Sprinkle with cupcake decorations and a bit of cardamom when cooled.
