Tirokroketes

Ingredients:

  • 125g grated cheese
  • 2 whole eggs
  • 100g flour
  • 70g mozzarella cut into 14 cubes
  • Salt and pepper
  • Cumin
  • Breadcrumbs
  • Oil (for frying)

Steps:

  1. The process is extremely simple. Beat the eggs with a fork, add the spices and the grated cheese. Stir well and add the flour. You will obtain a pretty sticky paste.
  2. With the wet hands take a teaspoon of the paste and place the mozzarella cube in the middle. If you have small mozzarella balls it will fit perfectly.
  3. Form round shape balls with wet hands and place them in bread crumbs. Welter them through breadcrumbs on all sides and then put them to cool for 30 minutes in the refrigerator.
  4. The croquettes are fried in oil bath. It should be well heated. The oil has to easily pass the half of the croquettes. You can also use a smaller pan but with taller walls and fry these cheese croquettes in several installments.
  5. The cheese croquettes must be browned on both sides. Until the first round, put the others back in the refrigerator. If the mozzarella gets out through any hole, you can turn immediately the dough ball with the mozzarella faced down and it will make a crust.
  6. The Tirokroketes are taken out on absorbent towels to remove any excess oil.
