Tortilla

Ingredients:

  • 350-400g potatoes (chopped like French fries)
  • 1 large onion (you can ignore it if you want)
  • 6 large eggs
  • Olive Oil for frying
  • Salt and pepper
  • Handful flat-leaf parsley

 

Steps:

  1. Put some oil in a pan and cook the onion until soft.
  2. Add the potatoes and cook over low heat until they get a golden colour.
  3. Remove the potatoes and onion using a strainer to drain the oil.
  4. In a bowl, beat the eggs well, add the onions and potatoes drained of oil and mix well with the help of a fork.
  5. Season with salt and pepper.
  6. Add the hot mixture into a heated pan and leave it on low heat to fry on one side for about 5 minutes then turn on the other side with the help of a lid or a plate as big as the pan and leave it 5 minutes again.
  7. Add chopped parsley on the tortilla.
